This recipe serves 2-4 people and requires only 2 large russet potatoes, 8 slices of bacon, 4 slices of smoked deli turkey, 1 cup of grated cheddar cheese, ½ a cup of sour cream, a tablespoon of hot sauce, 2 tablespoons of diced green onions (about 2 green onions), 2 pieces of 1 foot long tin foil, an apple coring tool 8 toothpicks. You will also need 2-4 ounces of fruitwood to smoke (the video shows Applewood).
This video goes through the whole process of cooking the potatoes and then gets into the art of the food. From the zig-zag top to the coring of the center and stuffing it, what makes this completely delicious is the bacon wrap. Of course the layered center of turkey and cheddar gives the potato it’s own unique style, and after everything is done and the cheese is starting to overflow, all that’s left to do is glaze it with hot sauce, cook a little longer, and garnish with the sour cream mixture and green onions.
